I love experimenting with new healthy combos for juices and smoothies. This one is simple and has only 5 fresh ingredients. Plus it’s chock full of excellent health benefits.

Cucumbers are full of vitamins that help boost immunity and give you energy. Cucumbers are also great for the skin and also help to flush out toxins from the body!

Ginger is an anti inflammatory and stimulates circulation. Ginger is also amazing at aiding in digestion.

Green Apples are a great source for fiber, minerals and antioxidants.

Coconut Water is rich in nutrients, boosts hydration and facilitates digestion.

Honey is a great source for antioxidants, vitamins, minerals and if it’s local to your area it’s helpful for reducing allergies.

//Cucumber Apple Ginger Smoothie//

1 1/2 cups coconut water

1 large green apple

4 inches of peeled cucumber

2.5 – 3 inches of fresh peeled ginger root

1/2 – 1 teaspoon local honey

Blend in a blender & enjoy!

Spinach Oregano Pecan Pesto

I’m starting Whole 30 today. So to go out with a bang I made this bomb pesto this weekend to go over gluten free pasta. My basil plants are done for the session so instead I made the pesto utilizing my oregano from the garden along with spinach and pecans and oh my goodness was it GOOD! It was also so very simple which makes it even better.

// Spinach Oregano Pecan Pesto //

2 Cups Fresh Spinach

1/4 Cup Fresh Oregano

1/3 Cup Pecans

3 Garlic Cloves

1/2 Cup Olive Oil

1/3 Cup Parmigiano Reggiano (As a vegan option, you can omit the cheese and double the pecans)

Juice of half a lemon

Salt & Pepper to Taste

Place all the ingredients in a blender or food processor and blend until combined. You can use this pesto on pasta, (which my toddler LOVED). Or you could use it as a dipping sauce for veggies, on sandwiches and so much more.
